Cupcake Fail

Last Friday my office had its annual office decorating contest. I decided to make some seasonal cupcakes to complement the festivities. On the menu was chocolate cupcakes with peppermint buttercream frosting, sprinkled with crushed peppermint.

I'm not a fan of chocolate cake, so I hardly ever bake it. However, I feel it's important to have a good chocolate recipe. The one that I used for this particular cupcake wasn't very good. The cupcake definitely wasn't very moist and fluffy like my other cupcakes. So it looks like I'm back to searching for a good recipe.

I got a bit distracted while baking, so the cupcakes stayed in the oven a minute or two longer than needed, leaving the tops of the cupcakes a bit crunchy. Basically this particular cupcake sucked.

I took the leftover cupcakes with me to Dallas on Saturday for Julia's Christmas party. Traffic was a nightmare; I-35N was basically a parking lot. Cars finally picked up speed, and then all of a sudden, everyone was braking and swerving left and right in attempt not to hit the car in front of them. As my car came to a screeching halt, I heard a crash in the backseat. I knew right away what happened. I pulled off the road to the nearest gas station and tried to clean up the mess. I couldn't get all the frosting up without causing more of a mess, so I left most of it on the floorboard. My car had the aroma of peppermint the rest of the trip.
